  • 2 cups baby spinach
  • 4 oz feta cheese, crumbled (optional)

  • Roast the Brussels sprouts (optional): Toss Brussels sprouts with a little olive oil and salt and pepper. Roast alongside the squash for the last 10-15 minutes, or until tender and slightly browned.
  • Assemble the bowls: Divide spinach among four bowls. Top with roasted butternut squash, Brussels sprouts, cranberries, and pecans.
  • Add feta (optional): Crumble feta cheese over the top for a salty, tangy kick.

Tips & Variations

  • Add other roasted vegetables like sweet potatoes or carrots.
  • Substitute other nuts like walnuts or almonds for the pecans.
  • Use a different cheese, such as goat cheese or crumbled blue cheese.
  • Add a drizzle of balsamic glaze for extra flavor.

This Harvest Bowl is a beautiful and delicious way to enjoy the flavors of fall without the guilt!  It's also great as a make-ahead dish – prepare the roasted vegetables ahead of time and assemble the bowls just before serving.
