Ingredients
- 1 butternut squash, peeled, seeded, and cubed (about 1.5 lbs)
- 1 tbsp olive oil
- 1 tsp maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup Brussels sprouts, trimmed and halved
- 1 cup cranberries (fresh or dried)
- 1/2 cup pecans, toasted and chopped
- 2 cups baby spinach
- 4 oz feta cheese, crumbled (optional)
Instructions
- Roast the squash: Preheat oven to 400°F. Toss butternut squash with olive oil, maple syrup, cinnamon, and nutmeg. Spread on a baking sheet and roast for 20 minutes, or until tender and slightly caramelized.
- Roast the Brussels sprouts (optional): Toss Brussels sprouts with a little olive oil and salt and pepper. Roast alongside the squash for the last 10-15 minutes, or until tender and slightly browned.
- Assemble the bowls: Divide spinach among four bowls. Top with roasted butternut squash, Brussels sprouts, cranberries, and pecans.
- Add feta (optional): Crumble feta cheese over the top for a salty, tangy kick.
